  1. In a sauce pan combine water sugar and glucose and salt and boil it until 155°C.
  2. Then add the butter, vanilla and sodium bicarbonate and the nuts. Whisk fast and remove from stove.
  3. Pour onto the silicon mat and cover with another sheet and roll it out thinly then allow to cool.
  4. Once cool, temper milk or dark chocolate and coat both sides with chocolate and sprinkle with sea salt.
  5. Break into pieces and it is ready to be served.
