  1. In a sauce pan, combine fresh cream, milk and vanilla compound and heat to about 60°C.
  2. In a small bowl, combine sugar and egg yolks and stir well mix.
    Once cream mix is hot slowly add in egg mixture and temper it.
  3. Sift and portion into ramekin then bake at 125°C in the water bath oven for about 30mins.
  4. Once cooked, remove and allow to chill.
  5. Optional, caramelizing sugar with a blow torch and it is ready to be served.
