  1. Weight all ingredients and set aside.
  2. With Stand Varimixer, Using paddle hook mixer, mix the combination of flour and premix with water at slow speed for 1 minute. Pour the water within the first of 30 seconds.
  3. Scrape down the sides using a spatula or a scraper.
  4. Continue mixing on slow speed (1) for 1 minutes and scrape down again.
  5. Further mix for another 4 minutes at fast speed (3).
  6. The finished product should resemble like coarse meal.
  7. Using both hands and rectangle plastic / wooden instrument compact the mixture into rectangular dough. Ensure all dough is compact.
  8. Ready to sheet the compact dough using noodles machine.
