Choux Pastry

  1. Use paddle to mix all ingredients (Choux Pastry) and beat on medium speed for 1min.
  2. Then beat for 7mins on high speed.
  3. Pipe onto the baking tray.

Butterfly Pea Craquelin

  1. Use paddle and mixed well with all the ingredients.
  2. Use a rolling pin to flatten the dough and put in chiller to set it firm.

Cheese Cream

  1. Use paddle and mixed well with all the ingredients.

Lastly

  1. Then use round cutter to cut out the Butterfly Pea Craqueline dough and place on top of Choux Paste paste.
  2. Bake in deck oven 200°c with 5sec steam, for 20mins or until fully bake.
